Banana and cinnamon crumble muffins


Whenever I think about making something (Cakes in particular) there's always a part of me that knows I'm being naughty and really shouldn't be making up such a devils concoction of pure deliciousness, however 99.9% of the time I follow through with my mischievous plans and only regret it again once I've scoffed a good 3 (Yes I know, I know...excessive!). Now these muffins right up above are no exception. Although they have plenty of sugar and butter in them, their moistness yet crunch mixed with a slight hint of cinnamon and... the (healthy) banana ;) makes up for it! They are gorgeous and my whole family loves them! As well as my overly fussy brother who mainly eats bacon!

























I adapted this recipe as i felt it needed more depth in flavour so I added dark brown sugar to the actual muffin and added cinnamon too. Because of the addition of sugar I lowered the quantities of sugar in the crumble topping else it would have been a recipe for tooth decay instead... Hope you enjoy!

Recipe: Makes 10.

For the muffin:
190g Plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
Pinch of salt
3 over ripe banana's (mashed)
150g white sugar
50g dark brown soft sugar
1 large egg
75g salted butter (melted)
1 tsp vanilla extract

For the topping:
25g dark brown sugar
15g butter
1/2 tsp cinnamon
15g plain flour

Method:

Preheat oven to 190 degrees c (otherwise 375 degrees f). Line a muffin tray with 10 large muffin cases.

In a big bowl mix together all the dry ingredients for the muffin. Then in a separate bowl mix together the banana, egg, butter and vanilla extract. Be careful not to over-mix either of these mixtures as this is the key to well risen soft muffins!!

Next mix the banana mixture into the dry ingredients until just combined. Then individually and equally fill each muffin case.

Next in a smaller bowl rub together all the ingredients for the topping with your fingertips until the mixture begins to resemble slightly damp sand. Sprinkle this evenly over the filled muffin cases, 

Pop in the oven for 16-18 minutes and be sure to check they are done by inserting a toothpick into each muffin to make sure it comes out clean.
